INGREDIENTS:𝗦𝗮𝗹𝗮𝗱: 3 cups AeroFarms Micro Brocoli 1 cup carrots (shredded) 1 cup red cabbage (sliced) ¼ cup red onion (thinly sliced) ½ cup toasted sliced almonds (reserve some for garnish) ½ cup fuji apple (cut into small chunks) 𝗗𝗿𝗲𝘀𝘀𝗶𝗻𝗴: ⅔ cup orange juice 2 tbsp miso 2 tbsp almond butter 1 shallot 1 tsp Dijon mustard
INSTRUCTIONS:1. To make the dressing, place all the ingredients in a food processor and blend until smooth and creamy. Add more orange juice if needed to thin it out.
2. Toss all the salad ingredients in a medium bowl. Drizzle the dressing over and toss to combine.
3. Enjoy immediately.
