- 3 cups AeroFarms Micro Brocoli
- 1 cup carrots (shredded)
- 1 cup red cabbage (sliced)
- ¼ cup red onion (thinly sliced)
- ½ cup toasted sliced almonds (reserve some for garnish)
- ½ cup fuji apple (cut into small chunks)
- ⅔ cup orange juice
- 2 tbsp miso
- 2 tbsp almond butter
- 1 shallot
- 1 tsp Dijon mustard
1. To make the dressing, place all the ingredients in a food processor and blend until smooth and creamy. Add more orange juice if needed to thin it out.
2. Toss all the salad ingredients in a medium bowl. Drizzle the dressing over and toss to combine.
3. Enjoy immediately.
