INGREDIENTS:
For the Salad: 2 ripe peaches, quartered and grilled ¼ cup crumbled cotija cheese 1 avocado, sliced ¼ cup toasted pepita 2 cup AeroFarms Spicy MixFor the Chili-lime vinaigrette: 2 tbsp lime juice 1 tbsp tbsp honey ½ tsp chili flakes 3 tbsp olive oil Splash of red wine vinegar Salt to taste
INSTRUCTIONS:
- Whisk the vinaigrette ingredients together.
- Toss microgreens in dressing.
- Plate and top with grilled peaches, avocado, cotija, and pepitas.
- Top with ground fresh black pepper if desired.
Optional: Serve with protein of choice such as chicken, steak or fish kabobs
