Chili-Lime Grilled Peach & Spicy Microgreen Salad

INGREDIENTS:
For the Salad: 2 ripe peaches, quartered and grilled ¼ cup crumbled cotija cheese 1 avocado, sliced ¼ cup toasted pepita 2 cup AeroFarms Spicy Mix
For the Chili-lime vinaigrette:
2 tbsp lime juice 1 tbsp tbsp honey ½ tsp chili flakes 3 tbsp olive oil Splash of red wine vinegar Salt to taste
INSTRUCTIONS:
  1. Whisk the vinaigrette ingredients together.
  2. Toss microgreens in dressing.
  3. Plate and top with grilled peaches, avocado, cotija, and pepitas.
  4. Top with ground fresh black pepper if desired.

 

Optional: Serve with protein of choice such as chicken, steak or fish kabobs
