1 container AeroFarms Micro Rainbow Mix 1 navel orange 1 Cara Cara orange 1 cup fennel bulb (sliced) 1 tbsp sherry vinegar or balsamic vinegar 8 Marcona almonds 4 tbsp goat cheese pinch of salt
1. Cut the rinds off the citrus fruit and cut into circle about 1/4 inch thick.

2. Slice Fennel thinly and marinate in the vinegar of choice and pinch of salt.

3. Toss remaining ingredient together and enjoy!
