𝗦𝗮𝗹𝗮𝗱 1 container AeroFarms Micro Super Mix 1 container AeroFarms Micro Rainbow Mix 2 cups cooked wild rice blend 1 cup sweet potato (diced + roasted) 1 cup roast chicken (diced or shredded) 1 apple (finely diced) ⅓ cup crumbled goat cheese ¼ cup toasted pecans (finely chopped) 𝗗𝗿𝗲𝘀𝘀𝗶𝗻𝗴: 1 tsp mustard 2 tsp honey ¼ cup apple cider vinegar ¼ cup olive oil salt and pepper
1. Cook the rice according to the package's directions.

2. Dice the apples, sweet potatoes, and pecans.

3. Shred the rotisserie chicken.

4. Make the dressing — place all ingredients in a small jar and shake vigorously until combined.

5. Place all salad ingredients in a large bowl. Drizzle with the dressing and toss to combine.
