This nourish bowl is a delicious and healthy meal that’s packed with a variety of nutritious ingredients. It features a base of fresh kale, topped with roasted sweet potato, creamy hummus, ripe avocado, crispy broccoli, tangy red onion, and sweet cherry tomatoes. To make this nourish bowl, simply chop up all of the ingredients and arrange them in a bowl. You can also add a drizzle of your favorite dressing or sauce for extra flavor. The result is a delicious and satisfying meal that’s perfect for lunch or dinner.

1 container AeroFarms Micro Super Mix 1 sweet potato 1 avocado 1 stalk broccoli 1 cup cucumber 1 cup cherry tomatoes 1 red onion 2 tbsp hummus or dip of your choice 1 tsp garlic powder 1 tsp onion powder 1 cup Baby Kale olive oil
1. Begin by preheating the oven to 425°F. Slice the sweet potato into rounds and the broccoli into bite size pieces.

2. Toss in a bowl with olive oil, garlic powder, and onion powder. Place on a baking sheet and bake for 25 minutes.

3. Assemble the remaining vegetables. Cut the cucumbers into half-moons, the cherry tomatoes in half, the onion in thin strips, and dice the avocado.

4. Once the broccoli and sweet potatoes are finished, assemble the bowl. Fill your bowl with AeroFarms Micro Spicy Mix and baby kale, then add the sweet potato, broccoli, tomatoes, cucumber, red onion, and avocado. Top with your favorite hummus.
