Spicy Breakfast Tacos

These tacos are a colorful and satisfying breakfast that is packed with protein, fiber, and nutrients. The combination of the warm and fluffy eggs, the fresh and creamy avocado, and the spicy microgreens creates a delicious and balanced breakfast that is sure to keep you feeling full and energized throughout the morning.

1 container AeroFarms Micro Spicy Mix or AeroFarms Micro Wasabi Mustard 4 whole grain tortillas 4 eggs 2 tsp butter or oil 2 oz goat cheese (crumbled) 1 avocado (sliced) salt and pepper
1. Warm tortillas in the microwave or on the stovetop. Set aside.

2. In a small bowl, whisk 4 eggs with a pinch of salt and pepper.

3. Heat 2 teaspoons of oil or butter over medium-low heat. Pour in whisked eggs and stir constantly until just cooked through — about 3 minutes. Turn off heat and stir in goat cheese.

4. Spoon scrambled eggs down the center of each tortilla. Top with sliced avocado and AeroFarms Micro Spicy Mix.

5. Fold tortilla and enjoy!
