English Muffin Breakfast Sandwich

𝗦𝗮𝗻𝗱𝘄𝗶𝗰𝗵 1 large handful of AeroFarms Micro Wasabi Mustard 1 tbsp olive oil 1 egg 1 English muffin 1 slice sharp cheddar cheese 𝗚𝗿𝗲𝗲𝗻 𝗚𝗼𝗱𝗱𝗲𝘀𝘀 𝗦𝗮𝘂𝗰𝗲: 1 cup AeroFarms Micro Spicy Mix 2 tbsp mayo ¼ cup Greek yogurt ½ clove garlic (minced) salt and pepper
1. Make the green goddess sauce by mixing together all the ingredients using a blender or immersion blender.

2. Heat olive oil in a nonstick pan over medium heat. Crack the egg into the pan and sprinkle with a small pinch of salt and pepper. Cook until the whites are completely set, and yolk is still slightly runny — about 3-4 minutes.

3. While the egg cooks, toast the English muffin.

4. Assemble the sandwich by spreading a dollop of the sauce on the bottom half of the muffin. Top with a slice of cheese, the egg, and a handful of greens. Enjoy!
