Plant-Powered Quinoa Salad

Quinoa, blueberries, walnuts, apples, pomegranate, lemon juice and not to mention GREENS make this salad a delicious and satisfying way to detox with food.

 

INGREDIENTS:
1 container AeroFarms Baby Kale 2 cup AeroFarms Baby Watercress (chopped) ½ cup rainbow quinoa ½ cup cucumber (cubed) ¼ cup apples (cubed) ¼ cup red onion (thinly sliced) ¼ cup fresh blueberries ⅛ cup chopped walnuts ⅛ cup pomegranate seeds 2-3 tbsp extra virgin olive oil 1 tbsp fresh lemon juice ½ teaspoon tsp lemon zest salt and pepper to taste
INSTRUCTIONS:
1. Whisk olive oil, lemon juice, lemon zest, chopped watercress, salt, and pepper.

2. Mix all other ingredients.

3. Toss salad with dressing.

4. Serve and enjoy!
