Plant-Powered Quinoa Salad

Quinoa, blueberries, walnuts, apples, pomegranate, lemon juice and not to mention GREENS make this salad a delicious and satisfying way to detox with food.

 

INGREDIENTS CHECKLIST
  • 1 container AeroFarms Baby Kale
  • 2 cup AeroFarms Baby Watercress (chopped)
  • ½ cup rainbow quinoa
  • ½ cup cucumber (cubed)
  • ¼ cup apples (cubed)
  • ¼ cup red onion (thinly sliced)
  • ¼ cup fresh blueberries
  • ⅛ cup chopped walnuts
  • ⅛ cup pomegranate seeds
  • 2-3 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • ½ teaspoon tsp lemon zest
  • salt and pepper to taste
INSTRUCTIONS

1. Whisk olive oil, lemon juice, lemon zest, chopped watercress, salt, and pepper.

2. Mix all other ingredients.

3. Toss salad with dressing.

4. Serve and enjoy!
