Plant-Powered Quinoa Salad

This salad combines a variety of fresh ingredients to create a vibrant and flavorful dish that is both satisfying and nutritious. Quinoa, blueberries, walnuts, apples, pomegranate, lemon juice and not to mention GREENS make this salad a delicious and satisfying way to detox with food. This quinoa salad is a perfect lunch or light dinner option that is both filling and nutritious. It is also a great choice for picnics or potlucks, as it can be prepared ahead of time and served at room temperature.


1 container AeroFarms Baby Kale 2 cup AeroFarms Baby Watercress (chopped) ½ cup rainbow quinoa ½ cup cucumber (cubed) ¼ cup apples (cubed) ¼ cup red onion (thinly sliced) ¼ cup fresh blueberries ⅛ cup chopped walnuts ⅛ cup pomegranate seeds 2-3 tbsp extra virgin olive oil 1 tbsp fresh lemon juice ½ teaspoon tsp lemon zest salt and pepper to taste
1. Whisk olive oil, lemon juice, lemon zest, chopped watercress, salt, and pepper.

2. Mix all other ingredients.

3. Toss salad with dressing.

4. Serve and enjoy!
